2007 Brut "X"

Brut "X" means extremely dry, extremely bright, extremely expressive. The dosage is under 0.6% residual sugar - barely perceptible, but adds just the right amount of "polish."

Food Pairing

Serve with anything raw, including oysters, fruit, vegetables, sushi and sashimi, cured and smoked fish, even yogurt.

Accolades

New release, not yet reviewed. The previous vintage was awarded 92 points by Wine Spectator. The 2005 vintage received 91 points in Wine Spectator. The 2004 vintage was awarded 94 points by Wine Enthusiast and 90 points by the Wine Advocate's Robert Parker.
